The beloved Motor City deep dish classic is coming to Toronto— but with a twist! Pablos Island Pies is a weekly pop-up pizza joint behind Dundas West bar Wallflower that’s serving up pan pizzas with innovative Pilipinx ingredients.

Think rectangular, gooey, thick pies with crispy toasted edges covered in island flavours like Longanisa sausage, coconut cream, roasted pork shoulder, and of course, pineapple. Don’t worry, even if you think pineapple on pizza is a cardinal sin, there are other mouthwatering offerings for everyone.
There are three main pies, ranging from $9 for a slice or $32 for a whole pizza. The Bespren Longanizza is inspired by the founders’ favourite Pilipinx breakfasts and is topped with roasted onions, Longanisa sausage, cheese, and a gooey fried egg.

If you want something even more outside the (pizza) box, the Plantation Pie is topped with smokey Achuete marinated shaved pork shoulder, pineapple, their signature sauce, and a Patis (fish sauce) caramel. Finally, the Lola Pie (a vegetarian offering) is a fresh take on a classic with roasted onions, herbs, and coconut cream. But it’s not just the flavours that are unique. Each pizza box is covered in one-of-a-kind hand-drawn art, from 80's cartoon characters, pop culture icons and musicians. No two boxes are the same!
